I actually like pho bo tai (rare beef steak, which cooks to well-done in the hot broth) and da chanh (lime juice),
but we all stay away from gau (fatty flank) and gan (tendon). Just look at that beautiful broth!

Lauren, your little pho photo essay is well done. You're getting good results with the new camera. I think it's better than I could have gotten with a DSLR! And it's amazing to see those shots of places I'VE BEEN and pho I've eaten. So glad for my time there and the chance to share in your life.
